{Recipe Wednesday} What’s for dinner? Blueberry spinach smoothie

Posted on 08 January 2014

A lot of us still aren't convinced that greens work well in a smoothie, and I was a sceptic at first, too.  I am officially a convert – and it's definitely worth a try if you haven't done so already.  For parents especially, this is a great way to sneak in some rich, hearty greens into a tasty beverage your kids will love without even knowing they're eating kale, spinach or the like.

This recipe comes from our own test kitchen at the Simply Straws HQ, and it's one you'll love  – super rich in antioixdants and nutrition.

Here's the scoop:

Blend: 1c of fresh spinach, 1/2 cup frozen (or fresh) blueberries, 1/2 cup pineapple, 1/2 cup water, 1 banana, 1/2 cup lowfat plain yogurt – add a tablespoon or two of chia for an energy boost and texture if you'd like.  Blend and enjoy!
